Created by Atlas Cafe, this bright sparkling drink is reminiscent of Christmas with a touch of baking sprices

Noting how 40 Knots has taken stewardship of the land, I am inspired by the imagery of the Northern Rough Winged Swallow and chose the name Bird Song.

This drink is for the workers, and it is based off of my favourite classic cocktail “The Manhattan.” I immediately thought of the brandied cherry when seeing the pickled grape garnish, but I wanted to mix it up and add a refreshing element to my cocktail. It is meant to be enjoyed after a long day on the winery or farm. It is also a lower ABV beverage so it is more sessionable compared to the classic Manhattan cocktail.

Inspired by a margarita but with a twist. The notes of anise in the Nordic-style spirit pair well with the spicy, savory notes of the pickled grapes. An “Akvarita” perfect for Autumn.
