40 Knots Wines are rooted in cool, grown and made using biodynamic methods. We grow noble varieties and top hybrids. All wines are small batch and made with a hands off approach. Our wine maker knows that great wines are made in the vineyard.

A selection of local apples hand-picked from our team was gently pressed and the juices were laid to ferment and then rest in neutral burgundy oak. Enjoy the whimsical aromatic journey of candy apple, raspberry, and violet. expect a full mouth feel of black current and strawberry jam with a nutty finish.
A sparkling apple wine made in the french traditional champagne method. This is not a cider. The juices fermented first in the tank and second in the bottle then rested on lees until disgorge. the apples are consisting of old European cider varietals and semi-sweet french and North American varietals. Vibrant and tiny bubbles will dance along your palate leaving lingering notes of crisp apple, clove, a fresh wet stone, and petrol.
Schonberger and Pinot Gris fermented and aged on skins in Italian Terracotta Amphora. No intervention, just patience. When timing was perfect, grapes were pailed from Amphora and screened to stainless without pressing.

Stainless steel driven Chardonnay to reflect the freshness and purity of fruit in this timeless variety. Showcasing the vineyard and not the barrel. A clean, fresh, and disrobed Chardonnay.
Our premium Chardonnay grapes were gently pressed and laid to rest in neutral burgundy oak barrels where they went through their fermentation process. Layne used a winemaking method called Bâtonnage. this is the process of stirring in the lees(sediment from yeast and grapes)while still in their respective barrel. Bâtonnage methods are used to extract flavor, aroma, and texture. A bouquet of baked apples, caramel, and cinnamon swirl out of the glass and into the air, the palate is a lovely round mouthfeel with lingering notes of toasty brioche, fresh apple, and minerality resulting in a clean, crisp finish.
