An extraordinary sparkling wine from our own Vancouver Island that hits all the perfect notes. A great balance that's dry yet seeming to give the tongue sensation of a light sweetness. A celebration all on its own that pairs with many savoury and sweet dishes. An elegant wine.

On Vancouver Island, in the beautiful seaside village of Comox, is 40 Knots Winery that produces an extraordinary cava they've named CAVU. A perfect accompaniment for anything, but especially for a crowd. I'm wild about this off-dry, perfectly sparkling, mildly citrusy bubbly from our peaceful island.
