Tasting Notes
Apple wine is barrel-aged and blended to create
this European-style country wine. Maraschino and red cherry on the
nose with a delightfully lush and rich palate of baked red apples,
cinnamon and clove. Naturally vegan and gluten free.
Vineyard Notes
Terroir - All About Ranch - Soils consisting of sandy gravelly marine
over sandy gravelly morainal leading to schistic clay at 12-16' depths.
Quadra - On the very tip of Quadra island, Cape Mudge overlooks
the Salish sea. This is predominately loam with underlying glacier
deposit. Great heat units and beautiful winds off of the water.
Farming: Sustainably farmed with no harsh chemicals, sprays or
fertilizers. Ripeness of the apples was chosen as they begin to fall
from the tree.
Production Notes
Pressed to neutral Burgundy oak. Completing
fermentation in oak and then racked them off of their lees into
burgundy barrels last containing Pinot Noir. Let aged for two years
un Burgundy.
Food Pairing Notes
Fantastic with hard cheeses and apple deserts.
