Tasting Notes
Velvety mocha, black fruit and spice mingle on the nose. Fine tannins and a full body are lifted by bright acidity. Naturally vegan and gluten free.

Production Notes
Marechel Foch selected at perfect balance
and ripeness. Destemmed and whole fruit into open top
fermenters. Gentle punch downs twice a day during
fermentation until reaching a perfect flavour profile with a
little residual sugar left, the fermentation is the ceased by
pressing the grapes off of their skins and fortifying the wine
and moved into neutral french oak. The fortification is local
from Shelter Point Distillery. We have chosen the use of
Canadian whiskey to add depth and complexity to this
Porto Style wine. Left aging in oak, we only bottle a barrel at
a time to allow the wine to age.

Fantastic paired with a charcuterie board or alongside dessert.

John Schreiner says this:
40 Knots Safe Haven 2016 ($21.90 for 350 ml). This is a fortified Maréchal Foch with grapes, the winery says, from one of the oldest Foch plantings on Vancouver Island. The aroma of chocolate, fig and cherry is already evident when the bottle is opened. In the glass, the colour is deep. On the palate, the wine is luscious with more chocolate and fig flavours and with soft tannins. The finish goes on and on. 91.

Love this wine. Bought two bottles two years ago and opened the first tonight to sip on after surgery and was very impressed. Sad that you are sold out, I want a Case. Let me know when the next batch is released.
